Making grape jelly
I bought some fresh grapes and pectin to make homemade grape jelly. I don’t like eating products with high-fructose corn syrup. It seems that every standard product that has "sugar" (naturally, traditionally added, or now, just for kicks) has high-fructose corn syrup.
I attemped to make grape jelly. I made a mistake and added too much juice to the pot. I supplemented the grape juice I mashed with 100% juice from a bottle and I didn’t want to remove some of the juice from the pot because now the two juices were mixed. I proceeded by doubling the fruit pectin but I didn’t want to double the sugar. I think that was my second mistake.
My concoction resulted in a grape syrup, or an extremely sweet and thick grape juice. I couldn’t spread this on bread to make a sandwich but I could definitely add it to waffles or ice cream, as you see in the other photos.
I’m unsatisfied by my grape jelly or jam options. All of the low sugar or no sugar products are absolutely disgusting. Sucking my thumb would taste sweeter. I wrote to Smucker’s asking them to make their standard grape jelly without high-fructose corn syrup and they send me a $3.00 off coupon which I used to buy "spreadable grapes." It’s made with "fruit syrup, concord grapes, lemon juice concentrate, and fruit pectin." I hope it’s good.
